You will only get database level lock if you do database backup. If you select database and excluse table then you are performing database level backup. If you select from the table list only what you want to backup then you are performing table level backup. In backup window, open the database list to the database you want then double click to get table list. Once you got that only check the table you want for that job then save it as a job. You do the same for the second job and save it. As long as you have enough media drive to support your concurrent jobs then you should not have a problem. Hope this helps.
