Simon,
Query logging will not store the data, just the query (if this option is set). Also, query logging isn't full-proof (unlike Access Logging).
In certain cases, logged queries can be lost or 'un-queryable' if restarts occur. For your requirements, I'd definitely try the Trigger approach.
You can save the 'before' and 'after' image using Triggers.
