Unless your data changes (inserts + updates + deletes), on those large tables (for that matter any size table), exceeds 5 to 10% of the total rows running statistics on a daily basis would be less useful. Perhaps you may want to do a bit of exercise on the volume of data that is changing by day, by week etc., before running the collect statistics every evening...
