The answer will depend on what version of SQL Assistant you are using.

On the General tab of Options set the 'Display dates in this format' field.

     SQLA 13          Enter the string   yyyy-MM-dd
     SQLA 12 or 7.2   Select   YYYY-MM-DD   from the dropdown list

Note that SQLA 13 provides a much wider range of possible date formats than earlier versions.
