Alternatively, if you want to use Fastexport and still have the | as a separator, you could just add it to the select list in the Fastexport script:

...
Select col1,
       '|',
       col2,
       '|',
...
From Tablename;

That's a little tedious and doesn't give you the variable length file, but at least the pipe symbols are in there.
