Basically the stats are ok. Where you might have problems is if you've got stats collected on the 'couple of columns' that you changed.
If you have these stats are (strictly speaking) now incorrect. Stats on other columns are ok.
Whether or not having 'incorrect' stats causes you a problem is down to how much the data values have changed, what your queries are etc
etc. To work that out would be a lot of work - and I think largely end up being guess work anyway !
